Ingredients:
2 tablespoons unsalted butter
1 medium onion, chopped
2 garlic cloves, minced
3 cups broccoli florets, chopped
3 cups chicken or vegetable broth
1 cup heavy cream
Salt and pepper, to taste
Instructions:
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent about 5 minutes.
- Add the chopped broccoli florets to the pot and stir to combine. Cook for 5-7 minutes, or until the broccoli is bright green and slightly tender.
- Pour the broth into the pot and bring to a simmer. Cover and let the soup simmer for 15-20 minutes, or until the broccoli is fully cooked and very tender.
- Use an immersion blender to puree the soup until it is smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return the soup to the pot.
- Pour in the heavy cream and stir to combine. Simmer the soup for a few minutes until it is heated through and slightly thickened.
- Season with salt and pepper to taste. If the soup is too thick, you can thin it out with a little bit of milk or additional broth.
- Serve the soup hot, garnished with additional chopped broccoli florets, croutons, or grated cheese, if desired.
