Recipe Cream of Broccoli Soup

       



        Cream of broccoli soup is a type of soup made from broccoli, stock or broth, and milk or cream. It is typically a thick and creamy soup that is pureed to give it a smooth texture. The soup often includes additional ingredients such as onions, garlic, and herbs for added flavor.


Ingredients:

2 tablespoons unsalted butter

1 medium onion, chopped

2 garlic cloves, minced

3 cups broccoli florets, chopped

3 cups chicken or vegetable broth

1 cup heavy cream

Salt and pepper, to taste


Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent about 5 minutes.
  2. Add the chopped broccoli florets to the pot and stir to combine. Cook for 5-7 minutes, or until the broccoli is bright green and slightly tender.
  3. Pour the broth into the pot and bring to a simmer. Cover and let the soup simmer for 15-20 minutes, or until the broccoli is fully cooked and very tender.
  4. Use an immersion blender to puree the soup until it is smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return the soup to the pot.
  5. Pour in the heavy cream and stir to combine. Simmer the soup for a few minutes until it is heated through and slightly thickened.
  6. Season with salt and pepper to taste. If the soup is too thick, you can thin it out with a little bit of milk or additional broth.
  7. Serve the soup hot, garnished with additional chopped broccoli florets, croutons, or grated cheese, if desired.
